Best for that was the Silk Cut Jaguars in the 80's, great racing against Porsche 956 if I have my numbers right.

Presumably just running fuel through the turbos like a turbine to keep the speed up.

Not sure anti lag is the source of the flames, as they are present under hard throttle.
I suspect the exhaust system is very short and free flowing, I think the flames are
Results of normal combustion, although I could be wrong.
