Track orientated tyres progressively break away?

I'm going to need some new tyres eventually and in my size of wheel which is 14 inch I'm restricted.
The two tyres I like are the Uniroyal Rainsport 3 and Nankang NS2R.

I've had the NS2R before on my tin top and found them ok but found they didn't like the cold or damp.

I want a tyre that has progressive breakaway in that when it goes to oversteer it is not sudden, would the road tyre be better for this?

Nankang are very good get them in the soft 120 wear rating.
