When someone resigns and they agree to work a months work/handover period are they entitled to receive payment for accrued holidays not taken?

yes, as long as the holiday entitlement has been earned (i.e. it won't be the whole years worth if only 6 months of it has been worked), and obviously the holiday must not have been used.

Thats not a "legal" answer, but based on doing the same thing about 4 times, and it always happening that way.

Agree with both replies. Holiday is "earned" and as such can be taken off the months notice/handover or paid.

Incidentally there's a formula for working it out per day worked, it's on an ACAS leaflet.. I'll try and find the link if you wish
