I really need to start building my chassis as I may not have the facilities come christmas.My problem is that I don't yet know which motor I will be using ( car or bike)so would it be realistic to build upto a rolling chassis before deciding or am I making things more difficult for myself?

not very far

you can build the whole lot, just miss out the diagonal bar don't know letter, that goes in the engine bay forwards level with top rail, also if you wish leave out the two inermost rails in engine bay at btm, the parralel ones, you can put all these 3 in to suit your engine type / position at a later date.
