I am changing out the old Sierra Clocks for a Digi-dash.
Do I have to have the new Dash set to the current miles, or can I just let it start from Zero?
I am not sure, in fact I am almost certain the current 20k odd miles is not correct anyway from when the car was built in 2004. Would the IVA/SVA
have logged what the speedo was reading when it passed when it was passed ?

No you don't need to do anything, but it's a good idea just to make of note of the old mileage (or keep the old clocks) for future reference if you sell it, so a potential buyer can match things up with the MOT recorded mileage.
What would happen if you didn't use the donor clocks...
I believe all new MOTs now record mileage in a bid to stop "clocking"

Yep as long as you don't hide the fact you've changed them its perfectly fine to do so.
