Legal Legalities

I've been happily tearing my Sierra to pieces for a while now without much though for all the legal gubbins, so I've a few questions about logbooks etc..

The V5 for the car is registered in my name, and has been declared SORN. The Sierra doesn't actually exist anymore, it's just a pile of scrap metal. I'm not that bothered about an age related plate, infact, I quite fancy a Q plate. Must be the boy racer in me trying to get out! Should I send the V5 off to say the vehicle has been scrapped? Will I still be able to prove the engine age (so as to get easier emmisions tests) without the V5? Is there anything else I should know, advice, before I go and do something silly?

keep the v5 as you will need to prove where all the bits came from and bills for everything you buy for it as well
