This is a dafe question so beware but I'd appreciate some clarification before wading in.

Still trying to sort out my toe angles for the front wheels. Before I start I need to make sure thae rack is centred.

Is it simply a case of turning the wheels from full lock to full lock count the turns of steering wheel then turn back half the number and it should be centred?

Can't see the point of trying to sort out the toe if I'm unsure if the steering is in the position where it should be pointing straight ahead.

Or am I barking up the wrong tree and there is there a better way of doing it?

I measured how far the ball joint was at the end of the rack at each end, and turn the wheel until they're the same. Only that way will you know that when going straight ahead that the ball joints are at the same position either side. Anything else is just guesswork, and you risk bump-steering to one side.

Once your rack is properly centred you can then fix your wheel position either at the wheel or where the column meets the rack.

sorry for the stupidity, I take it to measure the bal ends you need to remove the gaiters (i.e they're underneath?)

Yep it's under the gaiter - on mine, the inner bit where the ball joint screws onto the end of the rack was flat. So it's easy to measure between this flat edge and the opening-end of the rack casing itself on either side.
