Is My Face Red ?

Yes - classic mistake.

Tried fitting new track rod ends to my Sierra uprights steering arm - tapers don't fit.

Do I have wrong ones? Did I buy Escort ones to match steering rack and they don't work on Sierra uprights? Do I need to have uprights reamed out? Can I find old Escort TREs ? Nope

Do a search (Calvinx would be proud of me)

Oh The threaded bit points up not down, does it ? That would explain it.

Just hope I don't put the engine in upside down and end up with one forward and five reverse gears

My dad (deliberately) once flipped the rear axle on an old lorry my uncle owned to give the same 1 forward gear 4 reverse gears effect. Oh how they laughed as my uncle chased him round the garage with a spanner!
