Wiring on CX20 engine

I've got myself a part-build with a red top physically installed in the chassis along with a Manta GTE gearbox. The engine wiring loom is all there (I think) but no ECU. I'm gonna go down the bike carb or twin 45's route. This afternoon I've started stripping the gubbins off - taken off the fuel injection, alternator and inlet manifold. My question is, how far do I go with removing wiring and connectors? Presumably i'll I have to go for a programmable ignition so how much should I strip off (ooh er!)? There are still loads of multi-way connectors.
Cheers
