all aluminium looks great, otherwise, I'd have all plastic. Some people like the two tone look.

Aluminium has the more 'classic' look/style, compared to the more modern look of all plastic.

Aluminim oxidises quickly and needs regular polishing to keep shiny

I'd go for the two tone look, ally sides, plastic everything else.

What kind of weight penilty are we talking about if going to stainless sides as the others? and how thing can you go with stainless?

Aluminium has a density of 2.7 depending on the alloy and steel around 8 or so, again depending on the alloy.
A steel pannel has to be 1/3 the width of an aluminium panel to be the same weight.
If you are thinking of 3mm ali then steel can be an option. if you're using 1.5mm ali then your steel is getting a bit thin.
Polished stainless looks really nice but you can see all the dents in it. you need to have a reasonable thickness to keep it looking nice.
