due to the arrival of a new toy I am going to make some cycle wings from ABS.
Would 3 mm be thick enough?

might be considered a bit heavy. You can vary the thickness of course, perhaps thicker at the back where stones will hit and around the mounting points, 2mm sounds more like it.
