I would use 2mm, plenty strong enough. Don't know where you'd get it from at your end of the country as i live the other but it should cost you around £25-£30 for a sheet of 2.5M x 1.250M x 2mm ally.
If your a good welder i'd suggest 16 swg, will still be strong enough with the folds in it and the sheet should cost a little less as well

Hi Ian

I use Aalco in Norwich.

I think they have a depot in Southampton.

Without delivery and vat I've just payed £22.50 for 2m x 1m x 1.5mm (I get it through work)

or perhaps I should say my wife has just payed £67.50 for my Christmas prezzie. (Rear arches and bonnet in kit form )

hth

1.5 would be plenty thick enough for a fuel tank
