Sorry - can't answer about sheet metal in London/SE, but here's how to make a bonnet:-
Step 1. With nosecone and scuttle in place, measure the approximate size and shape of the bonnet, and cut to size from a sheet of ally.
Step 2. Using plenty of masking tape to protect against scratches, form the bonnet over nosecone and scuttle with a pair of ratchet straps.
Step 3. Climb up inside the engine bay and mark the bonnet to length with a marker pen. Remove from car and cut to length.
Step 4. Replace on car and strap down, making sure the bonnet locates in the flanges on nosecone/scuttle. If you're using neoprene foam strip to
mount the bonnet, make sure it's in place. Climb up inside engine bay and mark where bonnet meets side panels. Cut to width.
Step 5. Fold the 1" channels at the bonnet sides
There are a couple of photos of the process here and
here. FWIW, I just used ordinary aviation snips for cutting the bonnet (and the 8'
long side panels, too!).
Cheers,
Eddy

Possibly - if the top surface of your bonnet is flat. If you look at the photos in the links I posted you can see that my bonnet has a gentle
curvature, so no need for any bridges.

BTW - Ali sheet can be cut very quickly and easily with a jigsaw and a wide tooth cutting blade - doesn't half make a noise though! - good for
tight curve too
