What can you do with an open wheeled single seater?

Was wondering what people do with their open wheeled single seaters other than hill climbs as I'm considering buying or building a small, bike engined one next winter once the mnr is road legal,used for next year and possibly sold depending on price,
I would ideally like a bike engined,very light weight one which is relatively cheap ( £7,500 or under) but would not just want to use it 4-5 times a year. Can you do track days with these type of cars as I can't afford to participate in any type of race series! I already have a trailer so could tow to track days and would not want it road legal!
At the moment this is all speculation as I may love the mnr if the weather improves around here and may keep it for a few years!

How about a sprint series?? There are some that use race circuits and you do 1, 2 or 3 laps. You could even have a go in the mnr first see how you like it.

How expensive are they to do? And with me living in Cumbria, the amount of travelling could be huge if I am competing

Another option is for Test Days (as opposed to Track Days).

Basically a track day for 'proper' race cars. You'll need an MSA license and safety gear. There may also be a sound restriction on some events.
Need to be cautious as there will be seriously quick machinery/drivers approaching at a rate of knots behind you unless you are driving something pretty special.
