Have a look in Liams photo archive, he has done a multi joint set up.
Will do greggors 84. As an asides when making up a shaft should the uj's at each end be in line or at 90 degrees to each other????
Had a look and its a fair setup
However if I shorten the rack I'd get away with a straight rod. But I am unsure of whether I can do it my self
What threads are the ends of the
rack?

Not sure about rack shortening myself, but MK do it no problem.
The correct phasing for 2 UJs to cancel out non uniform velocity is to have the 2 joints inline. In my photos you can see my first two joints are
almost like this but not quite. They are all part of one bit (MK3 escort column if memory serves) so I didn't have much choice. You dont notice
anything odd turning the wheel though - phasing joints to cancel non uniform velocity is more a thing for shafts continuously running at high speeds
to reduce torsional vibration.
Note that for every joint over two you need an additional support bearing. I've got 4 joints so i need 2 extra supports.

I like your support bearings liam and we've got cheap
stuff at work just like that. How much clearance on the diameter of the shaft di you
leave? the shafts must either very concentric or quite a bit of clearance would be required. Or is any concentric movement taken up at the extra UJ?
