OT DIY Smoker
anyone made a smoker? (for smoking shausages and meats).
asking since I have a bunch of bay tree wood that I reckon would be ideal for smoking sausages.
failing that, anyone local who smokes and is looking for secented wood can come and collect - seems a shame to stick it in the wood burner.

not just use an oil drum? sounds like DIY taken a bit far tbh, going back to the dark ages there

Check this out. Bit of air flow control required, can also be done on bbq by placing chippings / sawdust on a metal tray above heat, need one with
lid.

What about a stainless barrel bbq? Go to google images and search for "stainless barrel bbq" and you'll see what I mean.
The coals could go on the bottom grill, wood chippings in some tins in the coals and the meat on the top. Close the lid and smoke away.
That is what I was intending to do with some mackerel this year but they didn't appear on the N Norfolk coast so maybe next year.

Bizarrely this AM I was just thinking about this very same subject in relation to smoking some trout. I believe there are cold smokers and hot
smokers.... Not sure which one should be used for which!!

Can you use the drum from an old washing machine or drier? Quite locost - I've seen it used for a BBQ.

The "River Cottage Fish book" by the chap who does River Cottage (unsurprisingly) does cover things like smoking fish and apparently is a
very informative book according to my mother. One day she'll return my book...
It was on offer last year at Tesco and other discount book stores so it might be worth looking out for a copy if cooking/eating fish is your thing.
The only thing it doesn't really cover is catching the elusive things.
