tried searching but can't find anything to download regarding the assembly/ disassembly of the cylinderhead. Mainly i want to remove the valves but not sure how to get at the collets

Have you got a valve spring compressor?

If so then compress the valves and remove the collets with one of those small magnet on a stick things.

If not then with the cylinder head on something it won't get damaged on, get a hammer, 16mm (ish) socket and an extension. Hit the valve cap down a couple of times and the collets will jump out. This won't work for refitting them though. You'll need a compressor for that.

sorry i don't think i explained things very well, i have the spring compressor but there is a cover on top of the spring, how is that removed?

On a Zetec you will need to remove the camshaft first and then the followers, making sure that you keep any shims together with the followers and ensure that the followers go back in the same place, as this is a black top you will also need to reshim the followers on working the valves or grind down the ends of the valves.

They "should" just pull out, but will probably be held in by a film of oil. I have done them (with a bit of a struggle with my fingers, but you could use a pair of pump pliers if the jaws are wrapped in something like masking tape first (to avoid any possible damage). A straight pull doesn't always work, so try a rotating motion as well.
