
I've trimmed the outer sheath but I'm struggling to cut the cable without splaying it and it needs to be right. How am I best cutting
it?

solder it then cut it
as above - run some solder into the section to be cut (not just coating the outside - need to get plenty of heat into the cable so it runs in when you apply the solder)
I have a pair of Knippex end cutters which make a perfect job of cutting Bowden cables with no special preparations at all. Take them to a pushbike shop and they will use something like this to do it.
wrap electricians tape round it then hit it in the middle with a sharp chisel
Wrap insulating tape around it tightly and cut quickly with the grinder with a thin cutting disk in. Works well for me.

Sharp chisel, big hammer as anvil, slightly smaller one to hit with 
I use side cutters....just make sure they are decent ones with hardened blades and they are sharp.

Sharp wood chisel and a heavy whack with a hammer.
Seal the end with a 400° soldering iron.
Look for someCable Shears. They have circular Jaws and will cut it round, not flat like sidecutters. I must admit, ive not had problems with sidecutters before either. Make sure they are sharp, and use the tips of the jaw, not the base.
Use your welder. Max current. A quick blast will melt it through. It'll cauterise the end too.

While you are at the bike shop watching them cut the cable with all of the above ask them for some of the crimp-on ends, these will stop the end from fraying, and cover the sharp ends.
Or if you know a RAC or AA patrol they will have the correct cable shears.
Sounds all very confusing, just go to a tool shop and buy some Rolson cable cutters, perfect cut everytime and simple. Barry
