On the zx9r carbs there is a t-piece with the inlet which is 10mm then that feeds through the other to 8mm pipe to the carbs.

Should i replace the t-piece so that all 3 outlets on the t-piece are all 8mm as i want to run a 8mm fuel line.

Will this be large enough for a 2ltr zetec????

Yep, that is what I'd do, seems like a sensible solution.

It's all 8mm on my ZX9 carbs anyway, has someone swapped yours before? That's on a ZX9 engine as standard.

just found out on the earlier carbs the line was 10mm, Just gonna make it 8mm

On zx9r /e carbs they use 10mm in for fuel i used 8mm copper pipe from the tank to the front of my car then a 8-10 mm air line connector if this helps
