here is how my zetec is plumbed, any reccomendations for changes, and what temps are peoples engines running at? At idle, in traffic and on a gentle run?

That's wrong! Outlet from the water rail should go to the top of the rad! And you should use the thermostat bypass hose.
Here are some photos of my old Zetec install

My thermostat outlet goes to the top as well.

Mine runs about 75 degrees on a gentle run and goes between 85 105 when stationary as the fan comes on and off.

cheers mate and the bypass hose plumed into which pipe?

Main hoses - top to top, bottom to bottom (of rad).

Bottom hose from header tank to bottom hose, top hose from header tank to top point on system.

Bypass hose bypasses the thermostat to allow some water to circulate when the stat is closed. So connect it back into the top hose after the stat, although if I remember correctly, mine was connected into the bottom hose to give a quicker warm up time (and didn't affect the running temps even with that cr*ppy old rad!).
