I used to have an old VW Scirroco on carbs that would run perfectly for about 30 minutes at a time, then splutter and cut out.

After loads and loads of investiagtion it turned out to be crap / rust in the fuel tank blocking the pick up. Took the tank off, swilled it round with a gallon of fuel and re-fitted the tank and it ran fine after that!

I'd already replaced the fuel filter near the pump BTW.

HTH

Worn/sticking fuel pump push rod, had it a few times on high mileage cars. Next time it happens try a squirt of petrol or brake cleaner down the carb, if it fires your problem is fuel related. It could also be the carb icing due to lack of pre heated air, VERY common on VWs and IIRC the 1.8 CVH has an intake air temperature sensor/valve which fails
