I am in the process of making my own exhaust manifould.
Q1:- Is it better to make a one piece plage as to 3 small flanges?
Q2:- Has anybody got a drawing of a single piece flange. The type of drawing that I can give to an Engineering shop to make it.
Q3:- Will I be anle to use 8 mm plate fot the flange?
Would have thought you could make a flange pattern from a one piece exhaust manifold gasket. Just checked my flange (fnarr fnarr) and its 10mm

i made an exhaust for my pinto engine, i used 4 seperate flanges each only 3mm thick. It worked fine. I suspect people use 10mm plate when doing it in one piece to reduce distortion, but by using seperate pieces the distortion is less important. I found it very easy even though it was one of my first pieces of 'real fabrication'.
I used a manifold that had a 10mm one piece flange and found it impossible to seal center section to cylinder head because flange was distorted . In
the end I cut flange so that it was
effectivley a three piece which then allowed center section to seal, also remember that the manifold studs have an unthreaded section , it may be a
good idea to measure it and make flange to suit?
i packed washers up to cover the unthreaded section.
Anyone know a cheap source of manifold studs??

Take them out and use bolts. They usually end up coming out anyway when the nuts seize on them.
