I have acquired a Fiesta thermostat housing. Would that small union coming out of the top be a suitable point to connect a header tank to?
Also - Do we bother with a thermostat given cooling issues?

With my engine, I am using a polo rad wich incorporates a header tank connector and thermostat, I purely use the one on the fiesta housing as a filling point.

The most important benefit is that you keep the flow rate out of the head down due to the restriction of the plate of the 'stat and the pressure
rises.
This in turn rises the boiling point of the coolant and prevents any localised phase changes in the head and hot spots in the combustion chambers
which could lead to detonation.
Taking the thermostat out actually makes the gauge read lower temperatures making it seem like a good idea but will mean higher localised temperatures
where you want to avoid them the most!
I kept the thermostat in mine. I am currently changing my system and will be connecting the union on top of the thermostat housing to the top of the
header tank, so that it allows any air in the system to vent. I have had problems with air becoming trapped in the thermostat housing after filling
the system. This then prevents the fan from switching on and the car boils.
The header tank itself is connected to the pipe between the water pump and inlet manifold.

In and out of header tank - or just one feed into the system?
If you are using the air bleed from the top of the thermostat housing then I'd use another feed into the system. I'm using the thermostat top as a bleed to the top of the header tank and a much larger 3/4" tube from the bottom of the header into the bottom hose of the main coolant tube, but you can use the heater return connector on the water pump if you want.
