Cooling problems on MNR ZX12R

What is the correct temperature for the engine. When I drive it on the road it doesent go over 70 deg.
On the track its 90 deg and then suddenly it jumps up to over 100 deg. Then it looses some water and I have to refill about 1 liter.
This is not normal, right ?
I tried to adjust the cooling pump controller, but it has no effect.

Cooling pump controller? Are you using an electric pump?

If you are using the Davis Craig EWP contoller have you removed the original (mechanical) thermostat from the engine thermostst housing? I had to remove mine, cut out the centre of the thermostat, and put it back in with the gasket so the housing still sealed to the engine casing but with no thermostat inside.

I´m running the EWP.
Don´t know if the thermostat has been removed.
I guess MNR did that when they built the car.
