If you have the gauge to suit then why not fit it - if not just stick with the switch.

Ive just fitted a high presure switch so it lights up bellow 25psi instead of the standard 6psi.

For sure, that's fine, but after some vigorous use a Zetec can run at 1 to 1.5 bar at idle, i.e. 14-21 psi, and still be fine. It's the pressure building up around 3-4000 rpm that matters. The problem with a high limit sensor switch is that if it triggers at 25psi it will show as "on" even when the engine is running fine on idle so you can't tell if you have genuinely lost oil pressure. Now, a 25 psi switch is fine if you have a guage as well, as it will give you early warning of a potential engine failure if the pressure falls away when you are pulling lots of revs, and you can check the gauge if it comes on a lower revs when you've had an enthusiastic run out. If you don't have a gauge you may find the higher pressure setting occasionally misleading.
