CEC Cable Gear Shifters
For car engine gear cable shifters like the one below..

(Image blatantly stolen from eBay)
... am I right in thinking that one cable moves in-out with the fore-aft motion of the gear stick and the other cable moves in-out with the left-right
motion of the stick?

Yes that sounds pretty much it, there is also often (always?) a joint at the gearbox end that converts the in-out to a clockwise/anticlockwise
rotation.
This diagram (Seicento) might make it clearer

I've got a couple of Audi cable shifters, but can I find the 'gearbox' end mechanism (part 9 on the diagram).
Would probably help if I knew the name of the part! Any suggestions?
