Both MS1 and MS2 will do what you want.

MS2 offers better fuelling control and has some snazzy accel enrichments so you should be able to get a better overall map with MS2 in theory.

I have just upgraded to MS2 because of the extra features it offers over MS1. But the pinto ran very well on MS1 and it was much simpler....

never really looked much at megasquirt (my car is on carbs)
but surely V2 includes all the features of V1 plus a few more?

V1 will do everything you want it to, is cheaper, and as David said, is much simpler. I'd say unless you are planning some serious upgrades later, V1 will suit you fine.
