how easy is it to complete the formalities following an engine change
For example, if I wanted to change the engine from a 1600 to a 2000 cc pinto how easy is it to get the V5 changed and registered with the new higher
capacity engine??
Going up in capacity shouldnt be hard at all really - although the DVLA might ask for confirmation to be confirmed (Mot station etc)
I don't think they will bat an eyelid going up in cc, coming down a tax bracket or two you need proof.
I'm almost positive it would be easier to change it from 1600 to a 1000, let's say an R1 for example?

Changed my twice in one year.
RF900 to anther RF900 then to ZX12R.
All the DVLA wanted was proof of enine numbers.
I just took photos clearly showing the engine number.
And a receipt for the engine.
Even spoke on the phone to them, and got a helpful person on the other end.
Reciept for the new engine and a couple of pictures.
went from 1.6 pinto to 2.0 and sent away the log book with a letter from a garage (friend) with engine details, you must put the actual cc. So with the 2.0 the cc is 1993cc as per the haynes manual or it comes back if you put 2.0 on the form saying that the engine capacity is incorrect.
They have tightened up the requirements over the last couple of years and require proof for both increase and decrease in cc these days. Rules are

I can confirm that they will need evidence. I've got an old Landy (S2A) that the previous owner fitted a used 200tdi engine to.
When I went to update the V5, I got a letter from the DVLA requesting me to provide evidence.
As the owner had no receipts for either the engine or the work carried out, I simply went to my local village garage and asked them very nicely if
they could give me a letter saying that vehicle reg. GBD**** has a 2500cc turbodiesel engine with engine number 12C**** or whatever. They gave me a
hand scribbled letter and I forwarded it to the DVLA who then simply returned an updated V5.
So it's not difficult, but they will ask for proof.
