Disc Thickness
What's the general wisdom regarding the optimum disc width for 7-style cars???

10mm solid - supplied with the Wilwood kits.
IMHO of course
For comparison std cortina are 12mm solid and sierra venteds are 25mm

That was my thought too.
Was discussing brakes with a mate and he was of the opinion that 10mm was far too thin.

think 10mm is the minimum thickness they're allowed to start a race with on the race pickup trucks

9-10mm - and vented disks are pointless on a 500 - 600kg se7en imho. In fact i'd say other than the weight penalty of a vented disk - the
ability to cool quicker is a huge disadvantage on a lightweight car

You don't often see vented discs on RGB race cars. Hardly ever, in fact. 10mm solids should be plenty good enough.
On the rears I've seen them turned down to 8mm.

well my old 106 weighed in at hefty 760kg and I think it had 9mm thick discs
then again they wern't very big or effective - but still more effectice than the 145 tyres they were stopping

Too thin for what? perfect for stopping a car 2/3 the weight of a late model classic mini IMO, no good at all for stopping a 2 tonne tin-top.
For reference the mini se7ens racers (650kg minimum weight) use 7.5" disc brakes that start off at 8.5mm (iirc) and manage to pretty much stand
the car on it's nose when they poke the stop pedal hard.

The thickness of the disk has absolutely no bearing on its ability to stop the car in normal conditions. The thinner disk will however warm up quicker
which can be good (or bad if it overheats). So 10mm thick disk great on a se7en but could soon overheat and give brake fade on a 2 ton tintop -
probably warp pretty quick too.

Thinner discs are much more likely warp --- warping occurs if the brakes get too hot and are not allowed to cool before the car stops. So how
likely the discs are to warp also depends how hot the brakes get.
The sure way to warp brakes is to over heat them hold the car stationary on the foot brake while the brakes are still stinking hot.
