embarrasing question about taper bearings...

Before I ruin something here, when fitting bearings into brake discs, do the narrow (smaller diameter) faces of the bearings always face each other?

I really should know, but I've never had to replace any discs hubs or bearings before

Yep.
And don't overtightened, the hub should have a tiny amount of rock. Well, on my old cars a mm or so at the tyre. And I always check again after a short drive, and again later. Some seem to be fine from the word go, some seem to need adjusting up a couple of times.

Lovely stuff, cheers! Thought it would be, but cant check the originals yet.
This is on a 1999 a4, the spec is finger tight, +1/8 turn.

Cant get the caliper carrier off though, so might as well build the rest up til I can get it heated up on saturday to get the bolts out

I think that depends how strong your fingers are
Personally I go tight and then back off a smidge until you just start to feel play as stated above.

You should not preload old bearings if you leave a small amount of play it will tighten up when everything warms up.
